The First Croissants
The Liberation of Vienna by Jan Sobieski
Our most beloved croissants have a special place in our breakfast tray. Yet, few people know that the well-known French pastry might have a Viennese heart. According to a culinary legend, the kipferl, a precursor of today’s croissants, was first baked in 1683. It all started one night during the siege of Vienna by the Ottoman Turks when a baker, who was working until late, heard the rumble of noises coming from afar. It was the Turks, who were digging out a large tunnel to penetrate the city’s walls. He raised the alarm, the tunnel was blown-up, and, thus, the city was saved! The next day the baker baked crescent-shaped pastries, the crescent being the symbol of Islam, commemorating the defeat of the Ottomans.
