The Ulen &Company imposed mandatory meals in order to keep the workers vigorous and in good health. The kitchen of the settlement was well equipped as there more than a thousand portions per day were prepared. Next to it, there was a spacious dining room, while dozens of cooks, assistants, and waiters worked there on a daily basis. Mandatory feeding improved the health of the workers dramatically, and consequently their performance, since working at the Dam and at the supplemental projects was extremely hard. An excerpt from the book written by Roy Gausmann, General Manager of Ulen &Company in Greece, states, "The Greek worker is very careful and thrifty, but tends to save too much on his food. If he is left alone, he will try to live on a piece of bread and a handful of olives, so that he can send as much money as he can to support his family, which is usually numerous. "
