Facing the Guardians' Portal, look behind you and you'll immediately see the Terrace of the Celestial Worlds, so head towards it. This is a wide structure allowing for great views over Regaleira, the village of Sintra, but also the Moors' Castle and Pena Palace (to your right, up in the mountains).
