A culinary introduction
Today the most prevalent crop in Karpathos is the olive. There are more than 1300 farmers who take care of 126,000 olive trees, approximately 20 trees per permanent resident. Most of the terraces around Olympos, in the north, contain olive trees and local people are far less likely to abandon this crop because it represents a significant investment in time and money and can provide products of high value and domestic usefulness. Olives and bread were always a common quick meal and consumption of olive oil in Greece remains very high, amounting to 20kg per capita. No Greek table is set without a bottle of extra virgin oil.
