Galaktoboureko (custard-filled pastry-recipe)
Carnival in Greece
In Greece, galaktoboureko is considered to be the traditional sweet of carnival. Recipe Ingredients: 500 gr. phyllo pastry sheets For the filling: 1,5 lt. milk ¾ cup semolina 2 cups sugar 1 tbsp. vanilla extract 4 eggs 2 tbsp. unsalted butter For the syrup: 2 cups water 3 cups sugar a small piece of lemon peel Instructions: Pour the milk, the sugar, the vanilla extract, the butter and the eggs into a saucepan. After the mixture heats, lower the heat to medium. Then add the semolina and stir with a whisk until it thickens. Remove from the heat. Lay half of the sheets at the bottom of a pan, making sure to brush each one with melted butter. Add the mixture and then lay the rest of the sheets on top brushing each one with melted butter. Before baking, slash the top layer of phyllo. Bake in a pre-heated oven to 180°C for 50'-60'. At the end, the phyllo gets deep golden colour. Meanwhile, prepare the syrup, boiling all the ingredients together for 2'-3'. Set aside to cool. When the sweet is ready, pour the syrup over it and allow time for it to be absorbed. When it cools, it can be served. Good Luck!
