With the Rinckenberger Brewery, the Kummer Brewery evokes the Bischwiller brewing industry. Brewer Christian Kummer was already elderly, provided with a huge belly, as befits a man who brews, sells and drinks a lot of beer. In order to serve his customers more easily, Master Kummer had made a wide circular incision in the oak wood of the counter of his establishment. In there he would settle his impressive belly as he filled the one-liter mugs (humpé in Alsatian) and pints (seidel in Alsatian) of blond draft beer, foamed properly with a yellow wooden paddle before the foam bathed the customers' mustaches with glee.
