How Corfu got its sweet tooth

Onto another hidden gem now, at the Voulismas pastry shop. It was the Venetians who brought sugar to Corfu during the Middle Ages and the French and English that introduced the expensive ingredients used to make great sweets. Having said that, it’s important to note that these treats were mostly enjoyed in the houses of the elite and powerful of the time. While they ate millefeuille in the city, they didn’t know what sugar was in the villages. The Voulisma patisserie was founded in 1936 and is one of the most traditional confectionery stores in the city. They have their own trademark sweet, called Bolseviki – multi-layered, dripping in syrup and covered with a thick layer of Serrano cream. It was inspired by a hat known as a hussanka, worn by Bolshevik proletariats… hence the name.
