Late nights with tsipouro
Ano Meria
Pavements with beautiful little taverns. Odours of dried wild herbs. In the bright fields of Syros indigenous wild flowers, such as daisies, are blooming and in Ano Meria the humble chamomile is just below your feet. You may pick the chamomile and once it has dried, after a slow yellow anguish, it can be used to relieve your stomach from late nights out drinking tsipouro. In the blender I place unsalted pistachios. Then I envelop seedless grapes in a soft spicy syrian cheese, forming small spheres, which I then cover with the crushed pistachio.
